I never like to admit this but I’m not much of a cook. I’m good with a few things like casseroles, quesadillas, omelettes, and the best mashed potatoes you’ve ever had (thanks to my Martha Stewart recipe). But for the most part, I’m a big fail in the kitchen department. The fact that I have the pickiest eaters for kids doesn’t help things either.
However, I was gifted a slow cooker for my mom a while back and it’s great and I’ve been trying to use it lately – definitely need to use it more often. I think this time of year is a great time to use a slow cooker much more often, especially with the busier schedules. Now that the kids are back in school, we have strict 8 p.m. bedtime, which means dinner has to happen about 5:30p.m. I also have a husband that loves to come home to a hot meal on the table and I try to oblige him every so often. (I make him bbq in the dead of winter only sometimes.)
My go-to cookbook for my crockpot is the Canadian Living Slow Cooker Collection cookbook. It’s great and I’ve had great successes with the recipes I’ve tried so far. My favorite was the three-bean chili – very yummy although it was meatless, so the husband wasn’t that much of a fan. His favorite? Pot roast – he would eat it every day if I made it for him.
So if you’re looking for me, I’ll be in my kitchen throwing some things in my crockpot and hoping it’s tasty enough for my brood.
